Weeknight Dinner




Dinner outside was the plan, like we have been doing all week, but it is starting to get cooler here at night. I considered being tough, putting on a sweater, and braving the chill, but in the end decided against it.

The salad and pizza we made were delicious, if I do say so myself.  It was quick and easy. We buy dough and toss on the toppings. The current favorites are 1. chicken, kale, red onion, with pizza sauce, mozz, parm, salt the edges, and bake. 2. Zucchini and potatoes with olive tapenade, mozz, parm, salt edges, and bake. The salad...the more the better is where I come from with salad.  Pecans, pears, blue cheese, yellow bell pepper, mixed greens, and homemade vinaigrette. The best part is everyone can help with dinner.  Harper likes to apply the toppings, which also means eat the parm. She does a good job with the pizza too.  

I'm thinking of planting some lettuce, so I can hand pick the salad.  First I have to plant the rosemary, mint, and cilantro that stare at me every day. And not to forget the new meyer lemon tree. She keeps asking for a nice big pot.
