Good Things

We had such a great holiday week. Both sides of grandparents were here and then we had two different friends in town. Happy we are being visited.




Thanksgiving morning Tony made the best waffles I have ever had. I feel I may require them every Sunday from now on. He added chopped ham and grated gruyere and cheddar cheese to the regular batter recipe. YUM!

2 large eggs
2 cups all-purpose or whole wheat flour
1 3/4 cups milk
1/2 cup vegetable oil or butter
1 tablespoon granulated or brown sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 cup grated gruyere and cheddar -- i think we used more than 1 cup...

1. heat waffle iron
2  beat eggs in large bowl until fluffy. beat in remaining ingredients just until smooth.
3. pour a portion of batter onto center of hot waffle iron. each waffle iron requires a different amount.
4 add cheese and ham
5. bake about 5 minutes or until steaming stops. repeat and serve immediately.
